Domaine de la Noblaie: Wines

The harvest at Domaine de la Noblaie is carried out entirely by hand, to maximise the quality of the selection as much as possible. Harvest of both red and white grapes can be carried out in several tries by the picking team. For the Cabernet Franc the team will return to selectively pick from lower-, mid- or top-slope sections of the vineyard, while for the Chenin Blanc the team will pick only the ripest bunches in up to four tries.

The work in the cellar of course varies according to the cuvée in question, as described below.

Red Wines

The Cabernet Franc is first sorted across a table and destemmed in the reception area, before being deposited into small wheeled carts which are used to moved the berries atop the vats into which they are dropped. There is no pumping of the fruit. After fermentation in the vats the new wine can be racked into subterranean vats as required, and from there the wine can be run down into barrels in the original Noblaie cellars (pictured), which sit below the new facilities.
