Château Ausone: Wines
The harvest at Château Ausone is carried out by a team of workers dedicated to the Vauthier properties, as alongside this property the family own a number of other nearby estates; in fact, I believe (although I am willing to be corrected should you know different) that with more than 70 hectares to their name, the Vauthier family are the largest landholders in the appellation.
After the selective harvest described on the previous page, the fruit is held in small refrigerated vessels for an overnight cold maceration, prior to transfer to the larger vats. The alcoholic fermentation is carried out in wood, with temperature regulation. I have been able to inspect these wooden vats during my many visits to the property; how the huge vessels were transported up to the vat room, at the top of that winding lane, is a mystery to me, although I suspect one of the aforementioned cranes may have been involved.
