The style of wine favoured here has long been along the lines of vin de soif, in other words wines for drinking, bright and thirst-quenching, and not necessarily wines that need to be drunk at table in order for them to show their best. This does not mean that the wines are not complex or interesting, just that they do not need food to become so.
