Vincent Carême: Wines
For many years the buildings on the Rue du Haut Clos has been the sole extent of the domaine, but in 2014 Vincent Carême undertook a new and exciting development. Further up the Rue Neuve lay the cellars of Lemaire-Fournier, a short-lived domaine which seemed to spring into life in 2003 only to go bankrupt after the 2004 vintage. I understand that the Lemaire-Fournier vineyards were acquired by the Feray family of Vignobles Feray, proprietors of Château Moncontour among other vineyards, but the facilities lay unused.
In 2014, however, they were finally signed over to Vincent, and he immediately set about refurbishing the buildings, and re-equipping them. The roof was replaced, and two new pneumatic presses were installed. While this facility has a little less romance than the original cellars, it is here that the largest part of the Carême harvest is pressed after picking.
