Domaine Pierre-Olivier Bonhomme: Vineyards
With the split Pierre-Olivier Bonhomme has taken on responsibility for approximately 15 hectares of vines, of which 6 hectares are owned, while the fruit of the remaining 9 hectares is purchased. These vineyards are tended along organic lines, either that or they are in the process of conversion to organic, almost without exception. Pierre-Olivier Bonhomme has access to a wide range of varieties, including Menu Pineau and other indigenous rarities.

As a general rule the fermentations are carried out by indigenous yeasts, the wines bottled unfiltered, and the sulphur dioxide use is minimal. In some cases no sulphur dioxide is used at all. In short the viticulture and vinifications follow the same natural philosophies that Pierre-Olivier Bonhomme learnt during his time with Thierry Puzelat at Clos du Tue-Boeuf. Some wines, such as KO In Côt we Trust, have established their own ‘cult’ following.
