Mathieu Cosme: Tasting & Drinking
Clearly, having met Mathieu Cosme only very recently, and having tasted through a selection of rather embryonic wines, some not even bottled, any judgement I make will be guarded. Nevertheless, I feel comfortable saying that Mathieu’s wines certainly piqued my interest. The Pétillant Naturel cuvée seemed particularly classic in its style, with scents and flavours very true to the appellation. Of the still wines the high-point of the portfolio at present seems to my palate to be Les Perrets, the demi-sec cuvée, although I must confess perhaps my penchant for the exquisite balance of sugar and acid that the demi-sec style shows best might have influenced my perception in this respect.
