Domaine de la Fontainerie: Tasting & Drinking

As I have already alluded, the style of wine made by Catherine Dhoye-Deruet tends towards the upright and acid defined, rather than the more vinous or perhaps even more generous styles some domaines regularly turn out. I have likened the style to that preferred by Philippe Foreau, and I do not think that is inappropriate. Both seem to like a dry wine to be just that, dry, with none of the sec-tendre softness that cane be found in some cuvées that are supposedly sec.
