Pascal Jolivet: Vineyards

In total Pascal Jolivet has 28 hectares in Sancerre and Pouilly-Fumé, with approximately 20 hectares in the former and 8 hectares in the latter. In Sancerre the vines are largely located around Bué, Verdigny and Sainte-Gemme, in Pouilly-Fumé the domaine has vines around Saint-Andélain and also in Les Loges aux Moines, very close to the banks of the Loire. Altogether these vineyards provide Pascal with approximately half of the fruit he needs, and thus he buys in the same again, and so the wines he produces reflect the output of nearly 60 hectares from these two appellations. In addition Pascal also has over 20 hectares of vineyards in Touraine at his disposal, which I do not discuss in great detail here, but which are utilised for his vin de pays wines.

Naturally all of the three major soils of the region are represented; perhaps unsurprisingly approximately 50% of the vineyards feature caillottes, soils of chalky stone which are generally of Oxfordian origin. Then there is terres blanches, a soil of clay and limestone, the latter here originating from the Kimmeridgian; thus these soils are the same as those found in the best vineyards dotted around Chablis. This soil type accounts for 30% of the Jolivet domaine, and the remaining 20% is accounted for by silex, or flint.
