Pascal Cotat: Tasting & Drinking
As I have hinted, the style of wine produced by Pascal Cotat is a little different to those made by his cousin, the house style here perhaps even further detached from the over-arching view of Sancerre than the wines of François Cotat. Those wines are distinctive enough, with their ripe un-Sauvignon fruit profiles and their polished textures, but the wines of Pascal Cotat tend towards a more plush, occasionally creamy style. They are bold, broad and confident, sometimes show a little residual sugar, and they always seem to show plenty of confidence.
