Domaine du Mortier: Vineyards
Domaine du Mortier is located high up the slope directly above the village of St-Nicolas-de-Bourgueil, in the hamlet of La Gardière, quite close to the tree line that marks the summit of the Bourgueil and St-Nicolas-de-Bourgueil terraces. They have now gathered together 14 hectares of vines, mostly Cabernet Franc of course, this being the only permitted variety for the rosé and red wines of these appellations. Having said that, the Boisard brothers have experimented with small plantings of other varieties along the way, including Chenin Blanc, which they maintain a good-sized parcel of, as well as Sauvignon Blanc, Menu Pineau, Grolleau and Cabernet Sauvignon.
The vineyards are managed using organic means, the bothers having been certified many years ago by Nature et Progrès. As well as using all the permissible organic methods, however, they also make use of some biodynamic treatments; in this they work together with a number of other domaines to make communal biodynamic preparations, the group including among their number Sébastien David, Xavier Amirault, Domaine de la Chevalerie and a handful of others.
