Jonathan Pabiot: Tasting & Drinking

To my palate, Jonathan Pabiot is making high quality wine, in an appellation that I find is on the whole less consistent and more disappointing at the top end than Sancerre. The domaine cuvée, featuring mostly limestone but with a little fruit from flint blended in, seems very true to its origins. The more upper class cuvées, all limestone again, provide plenty of interesting and more nuanced views on Pouilly-Fumé, with the majority of the wines combining tension, expression and definition.
