La Tour Saint-Martin: Tasting & Drinking
The real strength of the portfolio at La Tour Saint-Martin is in the white wines, not only those from Menetou-Salon, but also those from the Touraine and Valençay appellations. More important than appellation, in fact, is vinification; those wines produced using inert fermentation vessels to my palate show great freshness and sometimes interesting suggestions of perfume, chalk or minerality. The oak-vinified cuvées can also be rather special, though.
One of the most striking cuvées in the portfolio is Honorine, in which oak plays a significant role, as fermentation vessel and for the élevage. This cuvée is made from Sauvignon Blanc, fermented and aged in oak, a proportion of which is new.
