Domaine Hauvette
Domaine Hauvette is the creation of Dominique Hauvette, a lawyer who took up oenology. She moved to Les Baux in 1982 in order to establish her idyllic domaine. Starting out with just 2 hectares, she has gradually expanded to over 6 hectares today, largely planted with the typical varieties of the south; Grenache, Syrah, Clairette and Ugni Blanc, and also a little Cabernet Sauvignon.
Until recently there were just two cuvées produced here, red and white Domaine Hauvette, both AC Les Baux de Provence. A typical blend for the red would be about 40% Grenache, with 30% each Cabernet and Syrah, although the exact proportions vary with the vintage. In recent years, however, the range seems to be expanding. There is no rosé. (29/3/05)

Domaine Hauvette - Tasting Notes
Domaine Hauvette Les Baux de Provence 1998: Moderate depth of colour,
showing some maturity at the rim. Lots of smoky, burnt cherry, charred meat
aromas on the nose. Lovely texture on entry, light but in keeping with the body,
with just a little hint of creaminess. This builds on the midpalate, which shows
fresh acidity and more than a modicum of grippy tannin too. Cherry Grenache
flavour but with the tannic structure of Cabernet. Short finish, with some
lingering tannin. Characterful, and I like it. Will improve for 2-3 years more
yet. 16+/20
