Domaine D'Aupilhac
Sylvain Fadat, the man behind Domaine D'Aupilhac, is no newcomer to the region. He comes from a family of winemakers, three generations strong at least. Over the past decade or so he has been an important driving force behind a Montpeyroux revolution, that has seen the region move forward to take its place as a leading communal zone of the Languedoc, one which will surely be awarded appellation status in the next decade. Fadat's first vintage was in 1989, but since then he has more than tripled the area under vine, planting a mixture of "improving varieties" and the traditional grapes. He has plenty of good material to work with.
The best wines are red. The Montpeyroux 'Le Clos' is a brilliant Mourvèdre and Carignan dominated blend that sees 30 months in oak. The straight Montpeyroux, also extremely good, is a blend of the usual five varieties. The 100% Carignan cuvée is a benchmark example of this variety. There are also white and rosé Montpeyroux cuvées and a number of reds (using mainly Grenache and Cinsaut) and whites (using Ugni Blanc, Grenache and Chardonnay) bottled as vin de pays. (17/11/03)

Domaine D'Aupilhac - Tasting Notes
Domaine D'Aupilhac Coteaux du Languedoc Montpeyroux 1998: Comprised of 30%
each of Mourvèdre & Syrah, 20% Grenache and 10% each of Carignan & Cinsaut. Deep, densely
coloured, red-black wine. Fantastic nose - rich, pure blackberry Syrah fruit. On
the palate there is plenty of tannic structure which gives a hard, firm edge to
what is not quite a creamy texture. Massive fruit and firm acidity. This is
impressive stuff that really needs two maybe even three more years in the cellar.
16.5+/20 (November 2003)

Domaine D'Aupilhac Coteaux du Languedoc Montpeyroux 'Le Clos' 1998:
Comprises 40% each of Mourvèdre & Carignan, and 20% Syrah. An intensely
coloured, dark garnet-purple wine. And what a nose! Open, warm and expressive,
stuffed with the scents of the garrigue over dark, rich summer fruits, and a
smoky edge. A full, sweet, creamy edged palate, with massively rich texture, backed up by
dry tannin and just moderate acidity. Plenty of flavour here, and plenty of
potential. Needs another two or three years at least in the cellar. 16.5+/20
